Another fantastic day at class. Started with spring rolls and while I completely smell like fry oil it was a wonderful experience being able to throw together really delicious spring rolls and then moving on to a long process of working with duck breasts.The lime wine sauce was a gorgeous complement. A lovely day finished with a terrific evening with my dear friend John. A couple of pictures and then it's time for me to sleep.
OK it's late and you've coaxed it out of me - the secret I learned today - render out most of the fat from the duck's skin on the breast and you've created something that is really delightful. Now, that's all you're getting out of me.
Don't know which looks better - the spring rolls or the duck. May have to try them both sometime soon.
